The authentic, traditional Balsamic Vinegar of Modena is obtained from the fermentation of the cooked must of the indigenous Modena grapes, Trebbiano and Lambrusco. Once cooked and left to ferment, the must is stored in oak, cherry, mulberry or juniper barrels, which impart the enticing woody aromas so characteristic of Balsamic Vinegar. Balsamic Vinegar is aged at least 12 years before being released to market.
