Tsakistes (Green Cracked Olives)

These are green olives which are cracked when picked.  These can be traditionally  prepared with garlic, dried coriander and lemon, however other herbs can be used to your liking to enhance the flavour of the olive.

Zaromenes (Black Olives)

Black olives are harvested from the tree and placed in baskets and salt is used to extract the bitterness from the olive which gives the olive its distinct earthy flavour.

Koumiastes (Black Olives)

The olives are harvested when they are black and mature on the tree and placed in barrels with salt.  These are frequently rolled until the olive becomes mature enough to serve.
